Lightly Fried Cauliflower Rice

Cauliflower fried rice is a delicious and healthy alternative to traditional fried rice, perfect for those looking to reduce their carbohydrate intake or add more vegetables to their diet. Here's how to make it:

Ingredients: 1 medium head of cauliflower 2 tablespoons vegetable oil or sesame oil 2 cloves garlic, minced 1 small onion, finely chopped 1 carrot, diced 1 cup frozen peas, thawed

2 eggs, lightly beaten 3-4 tablespoons soy sauce or tamari 1 teaspoon sesame oil Salt and pepper, to taste Optional toppings: chopped green onions, sesame seeds, sliced cooked chicken, shrimp, or tofu

Prepare the Cauliflower Rice: Cut the cauliflower into florets, discarding the tough stems. Working in batches, pulse the cauliflower florets in a food processor until they resemble rice grains. Be careful not to over-process, or it will become too mushy.

Cook the Eggs: Heat 1 tablespoon of vegetable oil or sesame oil in a large skillet or wok over medium heat. Pour the beaten eggs into the skillet and let them cook undisturbed for a minute or two until they start to set. Gently scramble the eggs with a spatula until they are cooked through but still moist. Transfer them to a plate and set aside.

Stir-fry the Vegetables: – In the same skillet, add the remaining tablespoon of oil. – Add the minced garlic and chopped onion, and sauté for 2-3 minutes until fragrant and softened. – Add the diced carrot and cook for another 2-3 minutes until slightly tender. – Stir in the thawed peas and cook for an additional minute.

Add Cauliflower Rice: – Increase the heat to medium-high and add the cauliflower rice to the skillet. – Stir-fry the cauliflower rice with the vegetables for 5-6 minutes, or until it is tender but still slightly crisp.

Season the Fried Rice: Drizzle the soy sauce or tamari and sesame oil over the cauliflower rice mixture. Season with salt and pepper to taste. Be cautious with the salt, as soy sauce already contains sodium. Stir well to combine all the flavors.

Add Eggs and Toppings: – Return the cooked eggs to the skillet and toss everything together until evenly distributed. – Optionally, add any desired toppings such as chopped green onions, sesame seeds, or cooked chicken, shrimp, or tofu for added flavor and protein.

– Transfer the cauliflower fried rice to a serving dish or individual plates. – Garnish with additional toppings if desired. – Serve hot and enjoy as a flavorful and nutritious meal or side dish.
