Quick and Easy Pesto Zucchini Noodles

Zucchini noodles, also known as "zoodles," are a fantastic low-carb alternative to traditional pasta. Combined with pesto, you get a delicious and nutritious meal. Here's a recipe to make zucchini noodles with pesto:

Ingredients: For the zucchini noodles: 4 medium zucchinis Salt, to taste

For the pesto: 2 cups fresh basil leaves, packed 1/2 cup grated Parmesan cheese 1/2 cup extra virgin olive oil 1/3 cup pine nuts (you can substitute with walnuts or almonds) 3 garlic cloves, minced Salt and pepper, to taste

Optional toppings: Cherry tomatoes, halved Grated Parmesan cheese Fresh basil leaves, torn

Prepare the zucchini noodles: Wash the zucchinis thoroughly and trim off the ends. Using a spiralizer, create noodles from the zucchinis according to the spiralizer instructions. If you don't have a spiralizer, you can use a julienne peeler or a sharp knife to create thin, noodle-like strips. Place the zucchini noodles in a colander and sprinkle with salt. Toss to coat evenly and let them sit for about 10-15 minutes. This will help draw out excess moisture.

Make the pesto: In a food processor, combine the basil leaves, grated Parmesan cheese, pine nuts, and minced garlic. Pulse until the ingredients are finely chopped. With the food processor running, gradually add the olive oil in a steady stream until the pesto reaches your desired consistency. Season with salt and pepper to taste. Adjust the seasoning if necessary.

Cook the zucchini noodles: After the zucchini noodles have sat for a while, use paper towels or a clean kitchen towel to gently squeeze out any excess moisture. Heat a large skillet over medium heat. Add a small amount of olive oil to the skillet. Add the zucchini noodles to the skillet and sauté for 2-3 minutes, tossing occasionally, until they are just tender. Be careful not to overcook, as zucchini noodles can become mushy quickly. Once the noodles are cooked, remove the skillet from heat.

Combine the zucchini noodles with pesto: Add the pesto to the skillet with the cooked zucchini noodles. Toss until the noodles are evenly coated with the pesto sauce.
